Mango Sticky Rice

Ingredients:

• 150 g sticky rice
• 200 ml coconut milk
• 2 tbsp sugar
• a pinch of salt
• 1 ripe mango or ~120–150 g mango purée

Optional: sesame seeds or shredded coconut for garnish.

Instructions:

  1. Rinse the rice in cold water until the water runs clear.
  2. Soak the rice in water for 20–30 minutes (if time allows).
  3. Steam or cook the rice for about 15–20 minutes until soft and sticky.
  4. In a saucepan, gently heat the coconut milk with sugar and a pinch of salt (do not boil; just warm until the sugar dissolves).
  5. When the rice is ready, pour about 2/3 of the coconut sauce over it, mix, and let it absorb for 5–10 minutes.
  6. Serve with fresh mango slices or mango purée, either on top or on the side.
  7. Drizzle with the remaining coconut sauce before serving.
